LITTLE CHICKS

FOR BODY
Take 2 large potatoes boil & mash
Take 250 gms  chicken boiled & shredded
Mix mashed potatoes chicken 1/2 tbs  chilly paste & salt & make ovel  shape balls
Dip them in eggs then in bread crumbs & fry them in oil
FOR NECK
Take 1/2 cup maida salt & enough water to make a dough
Make it to S shape
Use whole black pepper for eyes
Brush them with egg yolk for yellowish color & bake them for 5 minutes
Lastly fit the neck into the ovel balls

Ingredients
500 gms chicken
4 onions
4 tomatoes
1medium piece ginger
8-9 cloves garlic
1/2 cup cashew nuts
2 tbsp dahi
1/2 tsp red chilly powder
1 tbsp dhania powder
1/2 tsp haldi powder
1/2 tsp salt
1/2 cup oil
Method
Grind onion, tomatoes, ginger,garlic,cashew nuts & dahi all together in a blender
In a big pan , mix chicken, all dry masalas ,oil & blender mix all together.
Close the lid & on slow flame cook the chicken till it is tender .

OATS TIKKI (CUTLET) RECIPE

OATS TIKKI (CUTLET) RECIPE

Aromatic Oats cutlet with mashed potato and spices.
INGREDIENTS: 1 Cup - Quick Cooking Oats 2 Medium - Potato 1 Medium - Carrot 2 - Green Chilies 1/2 tsp - Grated Ginger (optional) 2 tbsp - Chopped Coriander Leaves 1/2 tsp - Turmeric Powder 1 tsp - Red Chili Powder 1/2 tsp - Roasted Cumin Powder 1/2 tsp - Fennel Powder (optional) 1 tsp - Garam Masala 1 tsp - Chaat Masala 1 tbsp - Lemon Juice To Taste - Salt To Shallow Fry - Oil For Coating 1/2 Cup - Quick Cooking Oats 2 tbsp - Maida/All Purpose Flour 1/4 Cup - Water METHOD: Boil potato in pressure cooker for 3-4 whistles, once pressure released peel and mash or grate potatoes. Grating is good option to get potato without any lumps. While potato is getting pressure cook, roast all the oats (1 1/2 cups) until light brown, keep stirring to avoid burning, keep aside 1/2 cup of oats. Peel and grate carrot, finely chop green chili, coriander leaves. In a large bowl take mashed potato, oats, carrot, green chili, coriander leaves turmeric powder, red chili powder, fennel powder, cumin powder, salt, chaat masala, garam masala, lemon juice and mix everything well to form smooth dough, oats will works as binding agent perfectly, if you are not able to bind all the ingredients add more 1 to 2 tbsp oats or as required. You can also add bread crumbs. Divide the dough into 12 to 14 pieces and shape them into round, oval or any shape you prefer with 1/2 inch thickness. In a small bowl mix maida, water to smooth paste without any lumps and in another plate spread reserved oats. Dip tikki (cutlet) into maida mixture covering all sides quickly and then roll them in oats spread. Do not keep tikki in maida mixture for long or it will absorb moisture, repeat for rest of tikkis. Heat a pan or tawa add 1 to 2 tbsp oil and place 4 to 6 tikki (depends on your pan size), do not over crowd them and cook in slow to medium flame until golden brown, flip cutlets to another side add again 1 to 2 tbsp oil and cook until golden brown again, drain in kitchen tissue and do for remaining batch. Serve hot with ketchup, sauce or green chutney, sweet chutney. Notes You can add finely chopped onion, capsicum, grated beetroot too. Roast oats nicely to avoid stickiness, you can also keep tikki in fridge for 1 hour to more to firm them up or you can freeze then and fry whenever needed to serve. Instead of shallow fry you can also deep fry this cutlets if making in large batch. You can add crushed peanuts or finely chopped cashew nuts to extra crunch.

Ingredients
    1/2 kg chicken lollipop
    2 tsp ginger garlic paste
    2 tsp red chilli powder
    1/4 tsp red color (optional)
    1 tsp turmeric powder
    1 egg
    3 tbsp coriander leaves (chopped)
    8 tbsp cornflour
    salt to taste
    oil to deep fry

Method
In a bowl mix in ginger garlic paste, red chilli powder, egg, red color, coriander leaves, salt,turmeric powder and cornflour. Mix till well combined. 
    Now add the chicken lollipop and mix till the chicken is well coated.
    Keep aside for 2 hours.
    Heat oil in a pan , when hot fry the chicken pieces till well cooked and it looks golden brown and crisp.
    Remove from oil and place on absorbent paper to remove excess oil.
    Serve as appetizer with tomato sauce.

Chicken Sizzler : 1/2 kg Chicken 4 tbsp shezwan chutney 4 tbsp red chillies sauce 2 tbsp vineger 1 tbsp soya sauce 1 egg Red colour as require 2 or 3 tbsp corn flour 1/ 4 cabbages square piece 2 or 3 capsicum cut in square piece 2 or 3 Carrot cut into finger strips 1 bunch spring onion chopped 1 onion cut in to square piece 2 onion slice Salt to taste Method : Cut chicken in cubes wash and drain keep aside then add half of all sauce egg and red colour but dont add corn flour before when frying chicken add cornflour at that time marinate chicken keep aside Take kadai then fry one by one all vegetables except spring onion now keep aside , now take huge pot fry slice onion to pinkish in colour then add remaining sauces and little red colour then put all vegetables mix well cook for a while then remove from fire , now take another kadai fry chicken piece and put in that vegetable mixture again put on fire for sometime so that chicken and all vegetables become tender serve hot ..... KAAJU KATLI

KAAJU KATLI INGREDIENTS kaaju....100gms sugar....80 gms ghee....2tsp for greasing water...5 to 7 tbl sp (or as needed to dissolve the sugar) METHOD: 1...grind kaaju into fine powder. 2...in a kadai or pan put the water n sugar and make 1 string sugar syrup 3...now add the kaaju powder n let it cook in the syrup on a very low heat (so tat the colour doesnt change) see to tat no lumps are left. 4...once u feel tat the paste is starting to stick to the pan...transfer it to a greased plate...(it will start sticking within 5 min) 5...allow it to cool down enough for u the handle... 6...now make a smooth dough n roll it out into a smooth roti... 7...cut it into pieces after 15 to 20 min. your kaaju katli is ready within 30min...

ARABIAN DELIGHT

ARABIAN DELIGHT 1/2 kg kheema to be cooked dry with 1 tsp green masala (ginger, garlic &green chilli ) , 1/4 tsp haldi, 1/2 tsp chilli powder and 1/2 tsp dhana jeeru powder. When cool mix in few chopped spring onions, 1 hard boiled egg chopped. Add little kothmir and fudina chopped. Boil 3/4 kg potatoes. Mash and add salt, pepper and 3 tbsp butter. Add 2 slices bread soaked in milk. Mix well. Divide potato mixture into half. Now put foil in a square tin, put half of the potato mixture. On it place the kheema mixture. Cover with the remaining half potato mixture to look like a cake. bake in preheated oven till done (till light golden ). Remove and sprinkle cheese on top and bake for a little while again till the cheese melts and decorate with vegetable. Serve hot!!!!

Baked Chicken Lasagne

500g chicken mince
1 pack tomato purée
Mixed herbs, paprika onion
First prepare the chicken kheema by sautéing it without oil till all the water evaporates then add in oil ginger garlic paste one finely chopped onion tomato purée some sauce , chicken stock cube I spoon soya sauce and cook it properly till a nice mixture is formed
Now prepare the white sauce as we normally do with milk Maida and cheese put some herbs and paprika in the sauce
Layer your dish by first putting lasagne sheets if its indian make you will have to boil it other wise just soak the sheets in water and then lay them
Put the kheema and cubed coloured capsicum and white sauce make one more layer .. Garnish with cheese herbs and paprika and bake it for about 40 min

Vegetables Rice with Dragon Chicken

Chicken 1 kg
Schezwan sauce, tomato sauce, small round chillies celery sticks and garlic
Marinate the bite size chicken pieces in one egg if its small quantity chicken if I kg then take 2 eggs maida cornflower chilli powder and salt ,ginger garlic paste add everything as per your judgement keep it for 8 hours then fry the chicken and keep it aside 
Prepare the sauce 
In oil add fresh garlic and round chillies and chopped celery sticks then add in 2 to 3 big spoons of schezwan sauce and tomato sauce 2 spoon soya sauce and very little sugar that's if you like sweet and sour taste, add on the chicken this dish is meant to be dry but you can add in a little water if you wish 
For rice you sauté fresh garlic and green chillies first, then add in 2 big finely chopped onions sauté for 2 min and then add in finely chopped carrots ,capsicum , and a big cabbage sauté for 3 min let it cool and then add finely chopped coriander leaves 
When you serve top the rice with chicken and garnish with spring onions


Chicken Tikka Boti Wraps

Chicken Tikka Boti Wraps 
Ingredients:

Boneless chicken: 1 kg
Chilli powder: 1 tsp
Crushed red chilli: 1 tsp
Turmeric powder: 1 tsp
Paprika powder: 1 tsp
Tandoori masala: 1 tsp
Tikka botti masala: 2 tsp(optional)
Salt: 1 tsp or to taste
Cumin seeds: 1 tsp
Garam masala: 1 tsp
Green chili: 1 finely chopped
Yogurt: 2 tbsp
Fresh lemon juice: 2 tbsp
Black pepper: 1/2 tsp
Oil: 1 tbsp
Coriander: 2 tbsp
Vinegar: 1 tsp
Soya sauce: 1 tsp
Tortilla wraps: 8

Directions:
Add yogurt in a bowl and whisk it
Add all ingredients into it and mix well
Add boneless chicken into it and mix well
Cover and put it in a fridge for at-least 3 hours
Grill it by changing sides of the chicken frequently
Warm the wraps and fill them with Tikka Boti along with salad and mint chutney.

Methi Malai Chicken

Methi Malai Chicken Ingredients: 1/3 cup sliced almonds, soaked in some hot water for an hour 1 cup red onion, sliced 2 heaping tbsp mustard oil 3 green chilies, slited 1/2 tsp black cardamom powder 1/4 tsp salt 1/2 tsp black pepper 2/3 cup hot water 3 handfuls of freshly methi (fenugreek) leaves, chopped*
To marinate- 1.5 lbs skinless, bone-in chicken 1 tsp salt 1 tsp fenugreek seeds 1/2 tsp turmeric powder 1/2 tsp red chili powder 1 tbsp ginger paste 1/2 tbsp garlic paste 1 tbsp coriander powder 1.5 tbsp cumin powder 1/3 cup low-fat yogurt
Directions: In a large non-reactive bowl, add all ingredients to marinate. Mix well to coat chicken with marinate. Refrigerate to marinate for a minimum of 1 hour. Meanwhile, heat a large pan on medium. Add mustard oil and sliced onions. Cook onions until browned, between 3 to 5 minutes. Reserve oil by carefully draining browned onions into a small bowl. Cool onions before adding it into a blender with soaked almonds. Blend onions and almonds with a little water into a smooth paste. Remove marinated chicken from refrigerator. Heat the same pan on medium with the remaining mustard oil. Once oil is heated, add whole slited green chilies and black cardamon powder. Cook for 1 minute. Once chilies are blistered, add marinated chicken into the pan. Bring it to simmer and stir consistently. Cook for a few minutes before adding onion+almond paste, salt and black pepper. Stir to combine. Add hot water and bring chicken to a simmer. Cover and cook between 20 to 25 minutes or until chicken is completely done. Stir in handfuls of freshly picked and chopped methi (fenugreek) leaves. Stir to combine and cook for another 2 minutes. Serve hot with homemade soft chapatis!

Dragon Chicken

Dragon Chicken Ingredients: Boneless Chicken Breast - 500 grams(cut into thin strips) Coriander leaves or Spring Onion for garnishing (finely chopped) Oil for Deep frying For Marination: Dark Soya Sauce - 1 tsp Red Chilli Paste - 2 tsp (ground up dry red chilli) Egg - 1 All Purpose Flour / Maida - 1/2 cup Corn Flour / Corn Starch - 1/4 cup Ginger Garlic Paste - 1 tblspn Salt to taste Pepper - 1 tsp For Sauce: Oil - 1 tblspn Dry Red Chilli - 3 Cashews - 4 tblspn broken into small pieces Onion - 1 large sliced thinly Capsicum / Bell Peppers - 1 sliced thinly Ginger Garlic Paste - 1 tblspn Red Chilli Paste - 1 tsp (ground up dry red chilli) Dark Soya sauce - 1 tsp Tomato Ketchup - 2 tblspn Sugar - 1 tsp Method: Take chicken in a bowl and add all the marination ingredients. Mix well and let it marinate for 15 mins. Now heat some oil for deepfrying. When the oil is hot drop the chicken in oil and fry till golden. Drain and set aside. Now heat oil in a frying pan. Add in dry red chilli and cashews and fry till the cashew turn golden brown. Now add in onions and bell peppers and toss well in the oil. Add in ginger garlic paste and saute for a min. Now add in red chilli paste, soy sauce, tomato ketchup, salt, sugar and mix well. Cook this for a couple of mins till the water evaporates and sauce thickens. Now add in the fried chicken and toss well in the sauce. Add in chopped coriander or springonion and mix well. Serve hot

Ingredients:- Oil for frying  Yellow bell pepper juliennes as required  Red bell pepper juliennes as required  Processed cheese fingers as required ½ cup cornflakes   1-2 sprigs fresh rosemary     For batter 2 - 3 tbsp refined flour   1 tbsp cornflour Method:- In a pan keep oil to heat. To prepare batter in a bowl add refined flour, cornflour, water and mix. Place processed cheese fingers in between yellow and red bell pepper juliennes and prepare a sandwich. In a plate add corn flakes and mix fresh rosemary in it. Put the prepared sandwiches in the batter and coat them with the corn flakes mixture. Make similar sandwiches. Fry them in hot oil until golden brown and remove on a tissue paper. Make a tower of the prepared cheese melts. Garnish with parsley. Decorate the plate with tomato ketchup.Cheese melts is ready.

Ingredients:- 2 cups crushed dark chocolate biscuits  Chocolate ice cream as required ½ cup chopped canned cherries For decorations:- Canned cherries as required Sugar flowers as required Chocolate chips as required Chocolate vermicelli as required Sugar Hearts as require How to make:- In a cake mould, add some of the crushed dark chocolate biscuits and make a base.Add some of the chocolate ice cream and press it to set.Add chopped canned cherries and then add the remaining crushed dark chocolate biscuits and set it.Then add the remaining chocolate ice cream and let it set in the freezer for 3 hours.After it has set, decorate the cake with canned cherries and sugar flowers.Keep a mould in the center of the cake and add chocolate chips. Remove the mould.Decorate with sugar hearts and chocolate vermicelli.Cake ice cream is ready to eat.

Bread Idli

Ingredients:-
6 brown bread slices
 Yogurt as required
Green chutney as required
3 - 4 tikki any veg or non veg
 
For serving:-
3 tsp yogurt  
3 tsp green chutny
   How to mk:-

Cut the brown bread slices with a mould.On half of the cut bread slices, apply yogurt and on the rest of the bread slices apply the green chutney.On the yogurt bread slice, place a tikki and cover it with the green chutney bread slice. Make more like this.Steam the sandwiches in an idli steamer for 10 minutes.Once steamed, place the bread idli on a plate.In a bowl, add yogurt and green chutney and mix. Serve with the bread idli.Bread Idli is ready to eat.

1 cup white chocolate 
 7 - 8 strawberries
 2 tbsp strawberry puree 
  1 tsp caster sugar 
  1 tsp lemon juice 
  2 tbsp fresh cream   

For Layering 
Strawberry puree as required Cream as required Frosting creamFew chopped strawberry pieces  

Method:-
Melt the white chocolate with the help of double boiling method.In a pan add chopped strawberries, strawberry puree, caster sugar, lemon juice and mix. Now in the melted white chocolate add fresh cream.For layering take three glasses. Make one layer of strawberry puree, then prepared strawberry mixture, on this add white chocolate mixture and add cream.Now with the help of piping bag make a swirl of the prepared frosting cream. Add chopped strawberry pieces. Berry Berry Happy is ready.

INGREDIENTS 2 eggs   2 tbsp butter ½ cup castor sugar  2 tbsp corn flour  2 tbsp refined flour  3 tbsp hung curd   3 tbsp cream cheese  1 tsp vanilla essence  ½ tsp lemon juice  Butter as required Blueberry gaze as require Method:- For the batter; in a bowl add eggs and butter and beat with a hand blender. Then add castor sugar and beat again.Add corn flour, refined flour, hung curd and cream cheese and beat.Add vanilla essence and lemon juice and mix.Grease the mould with butter and pour the batter into it.Preheat the oven at 200 degree Celsius and bake for 15 minutes at 200 degree Celsius.Once baked, remove from the oven and let it cool. Then remove it from the mould.Spread the blueberry glaze on the cake.Place the cake on a plate and garnish it with orange slices cooked in orange juice.Blueberry Cheesecake is ready to eat.

Sauce- mix together tomato sauce1cup, honey1-2tbsp, chilli sauce1-2tbsp, soya sauce1tsp, 
Heat oil in pan add fresh garlic chopped than kadi patta saute well than add whole red chilli2-3pcs 
Add abv sauce saute it
Lastly add fried chicken
Mix well
Serve it

3 nos. Banana 1- 2 cup Milktbsp Sugar 2 tbsp Whipped Cream 2-3 tbsp Hesrhey’s Chocolate Syrup
Method:-
Firstly, peel bananas and then cut them.Now in a blender, put chopped banana, milk, sugar and hershey's chocolate syrup and blend it.Then in a glass, prepare a pattern with hershey's chocolate syrup and put whipped cream and prepared banana delight.Garnish the prepared banana delight with banana slices, canned red cherries and mint leaves.Your Hershey’s Chocolate Banana Delight is ready.

Ingredients:- 2 tsp oil  1 tbsp butter  2 tbsp finely chopped onions  ¼ cup boiled chickpeas  2 tsp dry garlic chutney  2 tsp dabeli masala  2 tsp chopped coriander  1 ½ tsp tamarind chutney  Salt to taste 1 tbsp chikoo  1 tbsp pomegranate seeds  1 tbsp peanuts  2 tbsp butter to roast 2 bread bun  Sev as required Coriander as required
Method:- In a hot pan, add oil and butter, finely chopped onions and sauté. Then add the boiled chickpeas and mash them.Add dry garlic chutney, dabeli masala, chopped coriander, water, tamarind chutney and salt and mix well.Keep the dabeli mixture aside on the pan and add the chopped chikoo, pomegranate seeds and peanuts on top.Slice the bread buns into halves from the middle. Add butter on the pan and cook the bread buns from both sides.Fill the lower half of the bun with the dabeli mixture, top it with sev and coriander and cover with top half of the bun.Add sev on it and remove on a plate. Also keep dabeli mixture in the plate. Garnish with coriander.Chickpea Dabeli is ready to eat.

Ingredients:- 2 potatoes 1 cup american corn Oil for frying 1 -1 cup all chopped green, red, yellow bell pepper 2 chopped onions Chopped basil leaves Salt and black pepper to taste 3 to 4 chopped green chilies 1 cup grated mozzarella cheese

Method:- Chop the potatoes with the skin.In a pan heat oil and sauté the potatoes until golden brown.Now add onions and let it sauté. Add red,yellow, green bell peppers, american corn and mix it.Now add chopped green chilies, salt and black pepper powder and stir.On a plate put the golden brown potatoes and add vegetable filling on it.Add grated mozzarella cheese and serve hot.

Cheesy Fluffies 

Ingredients:- 2 tbsp butter ¾ cup all-purpose flour ½ tsp red chili powder  ½ tsp baking powder   ¾ cup grated cheese  ½ tsp nutmeg powder  optional Serving:- Mustard and mayonnaise dip as required Method:- In a pan, add water and butter and let it melt. Add the all-purpose flour and let it roast. In a blender, add this mixture along with red chili powder, baking powder, nutmeg powder and grated cheese and blend.Dip a spoon in to water and scoop out a portion of the dough and drop it in to hot oil to fry. Repeat this process to make more. Once fried, remove on a tissue paper.Serve the prepared fluffies in a bowl with a mustard and mayonnaise dip. Sprinkle red chili powder on the dip.Cheesy Fluffies are ready to eat.

Bittergourd Sabji

Bittergourd sabji:

Ingredients:

2 bitter gourd
1 large onion
3tbsp jaggery
1 green chilli
2 tsp rice flour
1/2 Tsp mustard seeds
1/4 tsp cumin seeds
1/4 tsp turmeric pwd
A pinch of fenugreek seeds
Lemon size tamarind ball
Handful of curry leaves
Salt per taste
Oil and red chilli as required

Method: soak the tamarind and extract the juice
Wash peel and slice the bittergourd and set it aside
Heat required oil, add tempering ingredients and fenugreek seeds.. Add sliced onions, sauté for a minute. Add sliced gourd, turmeric and water. Cook with a lid until pieces are tender.
Add tamarind extract, salt, jaggery and red chilli powder and water. Add rice flour slightly diluted in water to the masala bitter gourds.. Let it cook for 10 minutes. Serve hot

Cheese Bread (Pao) Upma

6 brown bread slices 
Yogurt as required
Green chutney as required
3 - 4 tikki 

To serve
3 tsp yogurt  
3 tsp green chutney

Method

Cut the brown bread slices with a mould.On half of the cut bread slices, apply yogurt and on the rest of the bread slices apply the green chutney.On the yogurt bread slice, place a tikki and cover it with the green chutney bread slice. Make more like this.Steam the sandwiches in an idli steamer for 10 minutes.Once steamed, place the bread idli on a plate.In a bowl, add yogurt and green chutney and mix. Serve with the bread idli.Bread Idli is ready to eat.

Method

Cut the bread in to cubes.In a pan, add oil, butter, finely chopped green chilies, chili flakes, finely chopped tomato and chopped garlic and sauté. Then add the bread cubes, oregano, grated cheese, salt and black pepper powder and mix well.Remove in a plate and garnish with grated cheese and coriander.Cheese Pao Upma is ready.

Garlic Chutney

Garlic- 10 cloves
Red chillies- 3-4
Small onions- 4-5
Tamarind- 1 tsp
Salt to taste

To temper: 

Gingelly oil- 1/2 tsp
Mustard seeds- 1/2 tsp
Curry leaves- 1 small sprig

Method: grind the garlic, small onions, red chillies and tamarind together into semi course mixture in a blender.. Keep it aside. 

Heat 1 tsp of oil and add tempering ingredients, add the garlic onion paste along with salt. Saute till the raw smells leaves. Add 1-2 tspn of water and allow to boil. Add the remaining oil slowly and you will see the chutnet sticking the sides. Switch off and serve hot..

Now at last wen it done put of gas nd on dis stage lastly add 2 to3 spoon cream granish wth corinder leafs serve hot.
