ONION CHICKEN FRY

Chicken - 1/2 kg on the bone

For Marinating:
Chilli powder - 1  tblspn
Coriander powder / Malli podi - 2 tblspn
Garam Masala Powder - 2 tblspn
Turmeric Powder / Manjal podi - 1 tsp
Salt to taste

For Masala:
Oil - 3 tblspn
Cumin Seeds / Jeerakam - 1 tsp
Onion - 4 large finely chopped
Green Chilli - 3 pricked with a knife
Ginger Garlic Paste - 3 tblspn

Coriander Leaves / Cilantro - 1/2 cup finely chopped
Lemon Juice - 2 tblspn or to taste

Method:

Marinate chicken with the listed ingredients and leave it to marinate for 30 mins.

Now heat oil in a nonstick kadai. Crackle in some cumin seeds and fry for a min.

Now add in onions and green chilli. Fry them for 5 mins. Till it turns light golden.

Now add in ginger garlic paste and fry till the onion is well browned. Make sure the onion is golden, because that what gives good colour to the curry.

Now add in the marinated chicken and mix well.

Cover with a tight lid and cook on a very low flame for a good 30 mins to 40 mins stiring inbetween as you go.

Now open the lid and increase the heat. Dry up the chicken, this will make the masala stick to the chicken and get fried.

Add in tons of coriander leaves and lemon juice to taste.

Mix well and serve.

Crispy chicken method 2


Ingredients(for marination)
Boneless chicken breast 400gms, Maida 1tbsp,corn four 1tbsp,1 egg,Redchilli paste 1tbsp,Ginger garlic paste 1tbsp,vinegar 1 tsp,oil1spn,salt to taste.
Ingredients (for cooking)
Crushed corn flakes
Oil for deep frying
Method:Marinate chicken in d above ingredients written for marination n refrigerat overnite.
30 minutes before frying take out the chicken from fridge n roll in crushed corn flakes.
Deep fry the chicken on medium flame till golden brown....

Cut boneless chkn into long stripes
Marinate it wth ginger garlic chilli paste,red chilli sauce , salt n corn flour powder.keep it aside 4 sumtym.
Deep fry al d marinated chkn.
For semi gravy...cut sum garlic, green chillies,ginger n green onion
In another pan sauté d above wth sum more red chilli sauce n hot n sweet tomato ketchup. .add d fried chicken pieces....sauté for sum tym n it's Ready. ...
Serve hot...
It's really simple yet delicious.

For kiwi delight

Take a glass and add malas kiwi crush in the bottom. Add some lemon juice mint leaves and crused ice and freshly chopped kiwi. Pour sweetened soda and garnish it with lemon slice and mint leaves.

Take a glass and add some malas strawberry crush in the bottom. Add pinch of red chilli powder nd salt. Now add some ice crush and chopped fresh strawberries. Add sweetened soda (can use 7up or sprite) and garnish it with strawberry on d top. Your sweet and spicy mocktail is ready

Welcome drink

Tk a medium sz cup of water melon cube in a blender in dat put 5 to 6 tablespoons yogurt nd a big scope of ice cream nd few mint leaves blend it finely
Den in a glass put small pieces of water melon nd few mint leaves nd pour the drink on top of it  garnish wth some fresh  cream nd mint leaves

Nariyal drink...   

Take 1 glass of Nariyal  pani n mix with it half glass of lithchi juice mix it an crush an add nariyal malai serve chilled 

REFRESHING DRINK: CUCUMBER/MINT CRUSH WITH SODA.

Cucumber 3 to 4. Medium size nd tender. Fresh Mint leaves 8 to 10 strands. 1 lemon juice, sugar, blacksalt, piece of ginger according to taste. Crush all the abve ingredients all together. Wen serving serve chill with soda.     

Watermelon Smoothie......

2 cup watermelon puree
1/2 cup pineapple pieces
1/2 cup curd
3-4 drop vanilla essence
3 cup ice
2 spoon cream
Blend all together nd serve wth mint leaves

Pomegranate and sweetlime mocktail

Ingredients:
Lots of ice
Pomegranate juice
Sweet lime juice
Soda
Lemon
Or u can use limbu masala soda.
Few leaves of mint.
Fill 1|4 th of glass with ice, add pomegranate juice.. Then slowly pour lemon juice and then fill the glass with soda and garnish with mint.

Guava Mocktail

Ing :
2 ltr guava juice
2 handful of pudina leaves
1 tspn of chat masala
2 lemon ka juice
1 tspn jeera powder
Mix all in a grinder thn add guava juice while serving wet d edges of glasses wt lime juice n rim thm in a plate of chilly powder n black salt serve chilled juice

KADAI GOSHT MUTTON RECIPE

Ingredient 
Ginger juliennes 1 small Piece
Green chilly 3 Numbers
Kadai masala 1Tablespoons
Tomatoes 4Numbers
Onions (medium size) 2Numbers
Turmeric powder 1/4Teaspoons
Salt 0To Taste
Mutton 500Grams
Yogurt 1/2Cup
Coriander leaves(chopped) 1/2BunchMint leaves(chopped) 1/2Bunch
Oil 1Tablespoons
Chilly powder 1Teaspoons

Method
1. Heat oil in a pan add mutton, cook this mutton till brown, add salt, turmeric powder, slices of onions, tomatoes, cook this for 40 minutes till mutton is cooked. 2.Then add yogurt, kadai masala, green chilly, chilly powder, ginger juliennes, chopped coriander leaves and mint leaves and get it to the consistency required.

SPICY MUTTON MASALA RECIPE

Ingredients:
Mutton / Lamb - 1/2 kg cut into small pieces
Oil - 3 tblspn
Fennel Seeds / Sombu / Saunf - 2 tsp
Onion - 1 large sliced finely
Curry leaves - 1 sprig
Ginger Garlic Paste - 2 tblspn
Green Chilli - 2 slit
Tomatoes - 2 large chopped finely
Water - 1/2 cup ( if needed)
 
For Marination:
Yogurt / Curd - 1/2 cup
Chilli powder - 2 tsp
Coriander powder / Malli podi - 1 tblspn
Cumin Powder / Jeera podi - 1 tsp
Turmeric Powder / Manjal podi - 1 tsp
Garam Masala Powder - 1 tblspn
Pepper Powder - 1 tsp
Salt to taste

Method:

Take cleaned mutton pieces in a bowl. Add in all the marination ingredients in it and mix well. Let this marinate for a good 30 mins. You can leave it in fridge overnight too. If so take it out a hour before you cook so it comes to room temp.

Heat oil in a kadai. You can do this whole thing in pressure cooker. I used a kadai so you can see what is happening in it.

Add in fennel seeds and let it sizzle. followed by onions, chilli and curry leaves. Saute this for 5 mins or so.

Now add in ginger garlic paste and saute for a min.

Now add in tomatoes. Cover and cook till it turns mushy.

Now add in the marinated mutton along with all the marination.Mix well.

Pour this whole thing in a pressure cooker, add 1/2 cup water if needed and cook for 6 to 7 whistle. Simmer and cook for a 20 mins. Now switch off the flame and let the steam all escape. Open the pressure cooker and mix well.

Serve with rice.

Easy fruit custard

Ingredients
2 cups milk,boiled
3 tablespoons custard powder(vanilla)
3-4 tablespoons sugar
2-3 drops rose essence(optional)
Fresh cut fruits
Chopped nuts
Instructions
Take ¼ cup milk in a mixing bowl and add custard powder to it. Mix well without any lumps.
Add this to the remaining milk and add sugar. Cook in low flame till the custard thickens.
Refrigerate for 2-3 hours.
While serving take a glass and add one layer of chilled custard,add fresh fruits and then again custard. Top with chopped nuts and serve fruit custard immediately.

CHICKEN PIE-


Frst boil chicken in gg paste, green chillies, n salt..
Boil pasta wit lil oil n salt n keep it aside.
Den mde white sauce, add chopped carrot, beans, corns, chicken, n its stock n oregano, blck pepper powder n mix well. Den tke a microsafe bowl, Put white sauce, den pasta, sum red chilli tomato sauce, n  go on repeating da same.. Spread mozarella cheese n bake it fr 5-6mins.

मटर की कचौरी

सामग्री:
कचौरी के लिए आटा
•  आटा या मैदा – 2 कप
•  तेल या घी – 2 चम्मच
•  बेकिंग सोडा – 1 पिंच

कचौरी मे भरने का मसाला
•  मटर – 1 कप
•  हिंग – 1 पिंच
•  सौप – 1 छोटी चम्मच पीसी हुई
•  जीरा – 1 छोटी चम्मच
•  नमक – स्वादनुसार
•  धनिया पाउडर – 1 छोटी चम्मच
•  गरम मसाला – 1 छोटी चम्मच
•  अमचूर पाउडर – 1 छोटी चम्मच
•  लाल मिर्च – 1/2 छोटी चम्मच
•  हरी मिर्च – 2 से 3 बारिक कटी हुई
•  अदरक – 1 इंच बारिक कटी हुई
•  हरा धनिया – आधी छोटी कटोरी बारिक कटा हुआ
•  तेल – तलने के लिए

विधी:
•  आटा या मैदा मे 2 छोटी चम्मच तेल, बेकिंग पाउडर और नमक डाल दीजिये।
•  आटे को पानी की मदद से गोंध लीजिये, आटे को नरम गोंध लीजिये पर रोटी के जैसा नरम नही करना है।
•  उसके बाद आटे को 20 मिनट के लिए ढक कर रख दीजिये।
•  मटर को मिक्सी मे दरदरा पीस लीजिये।
•  कड़ाही मे तेल डाल के गरम कर लीजिये, उसके बाद ज़ीरा और हिंग डाल लीजिये। 
•  उसके बाद सोप, धनिया पाउडर, हरी मिर्च, अदरक, लाल मिर्च पाउडर, गरम मसाला, हरा धनिया, अमचूर पाउडर, हरा धनिया और मिक्सी मे पिसे हुए मटर के दाने, नमक डाल कर 3 से 4 मिनट तक पकने दीजिये।
•  कचौरी मे भरने के लिए मसाला तैयार है।
•  आटे के लोई उतनी मात्रा मे लेनी है जितनी हम पुरी के लिए लेते है, फिर बेलन से जितनी हम पुरी बनाते है उस से थोड़ी छोटी बेलनी है उस मे मटर का मसाला 1 छोटी चम्मच भर दीजिये। फिर उँगलियो की मदद से बन्द कर दीजिये और हथेली से दबा कर बड़ा कर लीजिये।
•  अब आप हल्के हाथ से बेलन की मदद से बेल लीजिये और 2 से 3 cm बेल लीजिये।
•  अब सारी कचौरी इसी तरह बना लीजिये।
अब कड़ाही मे तल ने के लिए तेल डाल दीजिये, जब तेल गरम हो जाए तब कचौरी डाल दीजिये।
•  एक कड़ाही मे 4 से 5 कचौरी आप एक साथ तल सकते हो, धीमी आग पर कचौरी तब तक तलनी है जब तक वो हल्की ब्राउन नही हो जाती। तली हुई कचौरी को tissu के ऊपर रख दीजिये, ताकि tissu तेल •
•  सोख सके। कचौरी बन कर तैयार है।
